Take Dictation is a dictation app for Apple silicon Macs running macOS 26 or later. You hold a key, speak, and cleaned-up English text appears at your cursor in Mail, Notes, Messages or any other app you type in. Speech recognition and cleanup run on the Mac, and the privacy policy from Shifted Music LLC says audio and transcripts are never sent to the company. The only network checks are for app updates and a weekly licence check. It costs $39 once for a household, with a fully featured 14-day trial and no account.
